Teriyaki Grilled Chicken with Pineapple Salsa

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup teriyaki sauce
- 2 cups diced pineapple
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and diced
- 1/4 cup chopped cilantro
- Juice of 1 lime
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a shallow dish, marinate the chicken breasts in 1/2 cup of teriyaki sauce for at least 30 minutes.
- Preheat the grill to medium-high heat.
- In a bowl, combine the diced pineapple, red onion, jalapeno, cilantro, lime juice, and salt and pepper to make the pineapple salsa. Set aside.
- Remove the chicken from the marinade and discard the excess marinade.
- Brush the chicken breasts with olive oil and grill for 6-7 minutes on each side, or until fully cooked, basting with the remaining 1/2 cup of teriyaki sauce during grilling.
- Once the chicken is cooked, remove from the grill and let it rest for a few minutes.
- Serve the grilled teriyaki chicken with a generous spoonful of pineapple salsa on top.
