Teriyaki Glazed Tofu

Ingredients
- 1 block (14 oz) of firm tofu, drained and pressed
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of brown sugar
- 1 tablespoon of minced ginger
- 2 cloves of garlic, minced
- 1 tablespoon of cornstarch
- 2 tablespoons of water
- 2 tablespoons of vegetable oil
- Sesame seeds and green onions for garnish
Instructions
- Cut the pressed tofu into 1-inch cubes and set aside.
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of brown sugar, 1 tablespoon of minced ginger, and 2 cloves of minced garlic to make the teriyaki glaze.
- In a separate small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
- Add the tofu cubes to the skillet and cook for 5-7 minutes, or until golden brown on all sides.
- Pour the teriyaki glaze over the tofu and stir gently to coat the tofu evenly. Cook for an additional 2-3 minutes, allowing the glaze to thicken and coat the tofu.
- Add the cornstarch slurry to the skillet and stir gently to combine. Cook for another 1-2 minutes until the glaze has thickened to your desired consistency.
- Remove the skillet from the heat and transfer the teriyaki glazed tofu to a serving dish.
- Garnish with sesame seeds and chopped green onions before serving.
