Teriyaki Chicken Stir Fry

Ingredients
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup sliced carrots
- 1/2 cup teriyaki sauce
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon sesame seeds (optional)
- Cooked rice or noodles for serving
Instructions
- In a small bowl, mix 1/2 cup of teriyaki sauce, 2 tablespoons of soy sauce, and 1 tablespoon of cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken pieces and stir-fry for 5-6 minutes, or until fully cooked. Remove the chicken from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced red and green bell peppers, broccoli, and carrots. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.
- Return the cooked chicken to the skillet with the vegetables.
- Pour the teriyaki sauce mixture over the chicken and vegetables. Cook, stirring constantly, for 2-3 minutes, or until the sauce has thickened and everything is well coated.
- Sprinkle with sesame seeds, if desired.
- Serve the teriyaki chicken stir fry over cooked rice or noodles. Enjoy!
