  • 1 teaspoon sesame seeds (optional)

  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1/2 cup teriyaki sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame seeds (optional)
  • Cooked rice or noodles for serving

Instructions

  • In a small bowl, mix 1/2 cup of teriyaki sauce, 2 tablespoons of soy sauce, and 1 tablespoon of cornstarch. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the chicken pieces and stir-fry for 5-6 minutes, or until fully cooked. Remove the chicken from the skillet and set aside.
  • Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced red and green bell peppers, broccoli, and carrots. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.
  • Return the cooked chicken to the skillet with the vegetables.
  • Pour the teriyaki sauce mixture over the chicken and vegetables. Cook, stirring constantly, for 2-3 minutes, or until the sauce has thickened and everything is well coated.
  • Sprinkle with sesame seeds, if desired.
  • Serve the teriyaki chicken stir fry over cooked rice or noodles. Enjoy!
