Teriyaki Beef Stir-Fry

Ingredients
- 1 lb flank steak, thinly sliced
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup sliced carrots
- 2 green onions, chopped
- 2 tbsp cornstarch
- 1/4 cup water
- Cooked rice, for serving
Instructions
- In a bowl, combine 1/4 cup soy sauce, 2 tbsp brown sugar, minced garlic, and grated ginger. Add the sliced flank steak and marinate for 15 minutes.
- In a large skillet or wok, heat 1 tbsp of vegetable oil over high heat. Add the marinated beef and stir-fry for 2-3 minutes until browned. Remove the beef from the skillet and set aside.
- Add another 1 tbsp of vegetable oil to the skillet. Stir-fry the sliced red and green bell peppers, broccoli, and carrots for 3-4 minutes until slightly tender.
- In a small bowl, mix 2 tbsp of cornstarch with 1/4 cup of water to create a slurry. Pour the slurry into the skillet with the vegetables, then add the cooked beef back into the skillet.
- Pour the teriyaki sauce over the beef and vegetables. Stir-fry for an additional 2-3 minutes until the sauce thickens and coats the beef and vegetables evenly.
- Garnish with chopped green onions and serve the teriyaki beef stir-fry over cooked rice. Enjoy!
