Instructions

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, combine 2 cups shredded cooked chicken, 1 cup shredded cheddar cheese, 1/2 cup salsa, 1/4 cup chopped fresh cilantro, 1 teaspoon ground cumin, 1 teaspoon chili powder, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper.
  • Place 3-4 tortillas between damp paper towels and microwave for 30 seconds to soften. Spoon about 2-3 tablespoons of the chicken mixture onto the lower third of each tortilla. Roll tightly and place seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.
  • Lightly spray the taquitos with cooking spray. Bake for 15-20 minutes, or until the taquitos are crispy and golden brown.
