Instructions

  • Preheat the oven to 375 degrees F. Grease a 9x13 inch baking dish.
  • In a large skillet, cook 1 pound of ground beef and 1 chopped onion over medium heat until the beef is no longer pink. Drain any excess fat.
  • Stir in 1 packet of taco seasoning mix, 1 can of black beans, 1 can of corn, and 1 can of diced tomatoes with green chilies. Cook for 5 minutes, stirring occasionally.
  • Spread half of the tortilla chips in the bottom of the prepared baking dish. Top with half of the beef mixture. Sprinkle with half of the cheddar and Monterey Jack cheeses. Repeat layers.
  • Bake for 25-30 minutes or until heated through and the cheese is melted and bubbly.
  • Let it cool for 5 minutes, then top with sour cream and chopped cilantro before serving.
