Ingredients
- 1 1/2 cups all-purpose flour

- 1 1/2 cups milk
- 2 eggs

Instructions
- In a large bowl, whisk together 1 1/2 cups of all-purpose flour, 3 1/2 teaspoons of baking powder, 1 teaspoon of salt, 2 tablespoons of brown sugar, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of ground nutmeg.
- In a separate bowl, mix 1 1/4 cups of mashed sweet potatoes, 1 1/2 cups of milk, 2 eggs, and 3 tablespoons of melted butter.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
- Cook until pancakes are golden brown on both sides, flipping once.
