Ingredients
- 8 rice paper wrappers
- 1 cup cooked shrimp, peeled and deveined
- 1 cup vermicelli noodles, cooked and drained
- 1 cup lettuce, shredded
- 1 cup bean sprouts
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup chopped peanuts
- 1/4 cup hoisin sauce
- 1/4 cup peanut sauce
Instructions
- Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds to soften.
- Lay the wrapper flat on a clean, damp kitchen towel.
- In a row across the center, place 3 shrimp, a handful of vermicelli, lettuce, bean sprouts, mint, and cilantro, leaving about 2 inches uncovered on each side.
- Sprinkle with chopped peanuts.
- Fold the uncovered sides inward, then tightly roll the wrapper, beginning at the end with the shrimp. Repeat with the remaining ingredients.
- Serve the summer rolls with hoisin and peanut sauce for dipping.
