  • 1/4 cup peanut sauce

Instructions

  • Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds to soften.
  • Lay the wrapper flat on a clean, damp kitchen towel.
  • In a row across the center, place 3 shrimp, a handful of vermicelli, lettuce, bean sprouts, mint, and cilantro, leaving about 2 inches uncovered on each side.
  • Sprinkle with chopped peanuts.
  • Fold the uncovered sides inward, then tightly roll the wrapper, beginning at the end with the shrimp. Repeat with the remaining ingredients.
  • Serve the summer rolls with hoisin and peanut sauce for dipping.
