Instructions

  • Preheat the oven to 375 degrees F.
  • Clean the mushrooms and remove the stems. Finely chop the stems and set aside.
  • In a bowl, mix together 1/4 cup bread crumbs, 1/4 cup grated Parmesan cheese, minced garlic, chopped parsley, salt, and black pepper.
  • Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped mushroom stems and sauté for 3-4 minutes until softened.
  • Add the sautéed mushroom stems to the breadcrumb mixture and stir to combine.
  • Stuff each mushroom cap with the breadcrumb mixture, pressing gently to pack the filling in.
  • Place the stuffed mushrooms on a baking sheet and drizzle with a little olive oil.
  • Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  • Remove from the oven and let cool for a few minutes before serving. Enjoy!
