- 2 tablespoons cold unsalted butter, cut into small pieces
Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with non-stick cooking spray.
- In a large bowl, whisk together 2 cups of flour, 1/2 cup of sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the raspberries.
- In a small bowl, combine 1/4 cup of flour and 1/4 cup of sugar. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Divide the muffin batter evenly among the prepared muffin cups. Sprinkle the streusel topping over the batter in each cup.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
