Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/2 cup fresh strawberries, diced
- Zest of 1 orange
- 1/3 cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons freshly squeezed orange juice
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together 2 cups of flour, 1/4 cup sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.
- Add the cold butter pieces to the flour mixture and use a pastry cutter or fork to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Gently fold in the diced strawberries and orange zest.
- In a separate bowl, whisk together 1/3 cup heavy cream, 1 large egg, 1 teaspoon vanilla extract, and 2 tablespoons freshly squeezed orange juice.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Transfer the dough to a lightly floured surface and pat it into a 1-inch thick circle. Use a sharp knife to cut the circle into 8 wedges.
- Place the scones on the prepared baking sheet and bake for 18-20 minutes, or until the tops are golden brown.
- While the scones are baking, prepare the glaze by mixing 1/2 cup powdered sugar with 1-2 tablespoons of freshly squeezed orange juice until smooth.
- Once the scones are done, remove them from the oven and allow them to cool for 5 minutes before drizzling the glaze over the top.
- Serve the scones warm and enjoy!
