Stir-fried Tofu with Mushrooms and Broccoli

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 cups of broccoli florets
- 2 cups of sliced mushrooms
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, minced
- 1/4 cup of soy sauce
- 2 tablespoons of hoisin sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of vegetable oil
- 1 teaspoon of cornstarch
- 1/4 cup of water
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a small bowl, mix together 1/4 cup of soy sauce, 2 tablespoons of hoisin sauce, 1 tablespoon of sesame oil, 1 teaspoon of cornstarch, and 1/4 cup of water. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the cubed tofu to the skillet and stir-fry for 5-7 minutes, or until golden brown. Remove the tofu from the skillet and set aside.
- In the same skillet, add a little more oil if needed, then add the minced garlic and ginger. Stir-fry for 1 minute until fragrant.
- Add the sliced mushrooms to the skillet and stir-fry for 3-4 minutes, or until they start to soften.
- Add the broccoli florets to the skillet and stir-fry for an additional 2-3 minutes, or until the broccoli is tender-crisp.
- Return the tofu to the skillet and pour the sauce over the tofu, mushrooms, and broccoli. Stir-fry for 1-2 minutes, or until the sauce thickens and coats the ingredients.
- Season with salt and pepper to taste.
- Serve the stir-fried tofu, mushrooms, and broccoli over cooked rice. Enjoy!
