Stir-fried Tofu with Mixed Vegetables and Cashew Nuts

Ingredients
- 14 oz firm tofu, drained and cubed
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 1/2 cup cashew nuts
- 3 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a small bowl, mix together 3 tbsp soy sauce, 2 tbsp hoisin sauce, minced garlic, and grated ginger. Set aside.
- Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat.
- Add the cubed tofu and stir-fry for 5-6 minutes until golden brown. Remove from the skillet and set aside.
- In the same skillet, heat the remaining 1 tbsp of vegetable oil. Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
- Return the tofu to the skillet with the vegetables. Pour the sauce mixture over the tofu and vegetables. Stir-fry for an additional 2-3 minutes until everything is well coated and heated through.
- Add the cashew nuts to the skillet and stir-fry for 1 minute to combine with the tofu and vegetables.
- Drizzle 1 tbsp of sesame oil over the stir-fry and season with salt and pepper to taste. Toss to combine.
- Remove from heat and serve the stir-fried tofu and mixed vegetables with cashew nuts over cooked rice. Enjoy!
