Spicy Stir-fried Tofu with Mixed Vegetables

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 cups of mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 3 tablespoons of soy sauce
- 2 tablespoons of sesame oil
- 2 tablespoons of chili garlic sauce
- 1 tablespoon of rice vinegar
- 1 tablespoon of cornstarch
- 1 teaspoon of sugar
- 2 cloves of garlic, minced
- 1 teaspoon of grated ginger
- 2 green onions, chopped
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, 2 tablespoons of chili garlic sauce, 1 tablespoon of rice vinegar, 1 tablespoon of cornstarch, and 1 teaspoon of sugar. Set aside.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and stir-fry for 5-6 minutes, or until golden brown and crispy. Remove the tofu from the skillet and set aside.
- In the same skillet, add the minced garlic, grated ginger, and chopped green onions. Stir-fry for 1-2 minutes until fragrant.
- Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes, or until they are tender-crisp.
- Return the tofu to the skillet and pour the prepared sauce over the tofu and vegetables. Stir-fry for an additional 2-3 minutes, or until the sauce has thickened and everything is well coated.
