Steak Fried Rice

Ingredients
- 1 lb flank steak, thinly sliced
- 3 cups cooked white rice, chilled
- 3 tbsp vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 tbsp soy sauce
- 2 eggs, beaten
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over high heat.
- Add the sliced flank steak and stir-fry for 2-3 minutes until browned. Remove from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of vegetable oil. Add the diced onion and minced garlic, and stir-fry for 2 minutes until fragrant.
- Add the mixed vegetables to the skillet and stir-fry for an additional 2-3 minutes.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
- Add the chilled cooked rice to the skillet, breaking up any clumps, and stir-fry for 3-4 minutes until heated through.
- Return the cooked steak to the skillet and pour in the soy sauce. Stir-fry for an additional 2 minutes to combine all the ingredients.
- Season the fried rice with salt and pepper to taste, and garnish with chopped green onions before serving.
- Serve hot and enjoy!
