  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled blue cheese
  • 1/4 cup balsamic vinaigrette

Instructions

  • Preheat grill to high heat.
  • Season the flank steak with 1 tsp of salt and 1/2 tsp of black pepper, then drizzle with 1 tbsp of olive oil. Rub the seasoning and oil into the steak.
  • Grill the steak for 4-5 minutes per side for medium-rare, or to your desired level of doneness. Remove from grill and let it rest for 5 minutes before slicing thinly against the grain.
  • In a large bowl, toss the mixed salad greens, cherry tomatoes, and red onion with the remaining 1 tbsp of olive oil and balsamic vinaigrette.
  • Divide the salad mixture onto 4 plates, then top each with slices of grilled steak and crumbled blue cheese.
  • Serve immediately and enjoy!
