Ingredients
- 1 lb flank steak
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled blue cheese
- 1/4 cup balsamic vinaigrette
Instructions
- Preheat grill to high heat.
- Season the flank steak with 1 tsp of salt and 1/2 tsp of black pepper, then drizzle with 1 tbsp of olive oil. Rub the seasoning and oil into the steak.
- Grill the steak for 4-5 minutes per side for medium-rare, or to your desired level of doneness. Remove from grill and let it rest for 5 minutes before slicing thinly against the grain.
- In a large bowl, toss the mixed salad greens, cherry tomatoes, and red onion with the remaining 1 tbsp of olive oil and balsamic vinaigrette.
- Divide the salad mixture onto 4 plates, then top each with slices of grilled steak and crumbled blue cheese.
- Serve immediately and enjoy!
