Instructions

  • In a large pot, bring water to a boil and add 2 lbs of chopped potatoes. Cook for 15-20 minutes or until tender.
  • In a separate pot, bring water to a boil and add 1 lb of chopped kale. Cook for 5-7 minutes or until tender. Drain and set aside.
  • In a skillet, cook 1 lb of smoked sausage according to package instructions. Once cooked, slice the sausage into rounds and set aside.
  • Once the potatoes are tender, drain and return them to the pot. Add 1/2 cup of milk and 4 tbsp of butter. Mash the potatoes until smooth and creamy.
  • Add the cooked kale to the mashed potatoes and mix well. Season with salt and pepper to taste.
  • Serve the stamppot in bowls, topped with the sliced smoked sausage rounds. Enjoy!
