  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/4 cup chopped peanuts (optional)

Instructions

  • Prepare the spring roll wrappers according to package instructions to soften them.
  • Lay a softened spring roll wrapper on a clean and damp kitchen towel.
  • Arrange a small handful of shredded lettuce, carrots, cucumber, mint, cilantro, and vermicelli noodles in the center of the wrapper.
  • Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly to enclose the filling.
  • In a small bowl, whisk together hoisin sauce, peanut butter, soy sauce, rice vinegar, honey, and sesame oil to make the dipping sauce.
