Ingredients
- 12 spring roll wrappers
- 2 cups shredded lettuce
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1 cup cooked vermicelli noodles
- 1/2 cup hoisin sauce
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1/4 cup chopped peanuts (optional)
Instructions
- Prepare the spring roll wrappers according to package instructions to soften them.
- Lay a softened spring roll wrapper on a clean and damp kitchen towel.
- Arrange a small handful of shredded lettuce, carrots, cucumber, mint, cilantro, and vermicelli noodles in the center of the wrapper.
- Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly to enclose the filling.
- In a small bowl, whisk together hoisin sauce, peanut butter, soy sauce, rice vinegar, honey, and sesame oil to make the dipping sauce.
- Serve the spring rolls with the dipping sauce and sprinkle with chopped peanuts if desired.
