  • Add 2 cups of fresh spinach to the skillet and cook until wilted, about 2 minutes.
  • In a separate bowl, beat 4 large eggs and season with salt and pepper to taste.
  • Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side.
  • Scramble the eggs until they are fully cooked and mix them with the vegetables in the skillet.
  • Warm 4 large flour tortillas in a separate skillet or in the microwave for 20 seconds.
  • Divide the egg and vegetable mixture evenly among the tortillas, and sprinkle 1/2 cup of shredded cheddar cheese over the top of each.
  • Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
  • Serve immediately and enjoy!
