Ingredients
- 4 large eggs
- 1 cup of sliced mushrooms
- 2 cups of fresh spinach
- 1/2 cup of shredded cheddar cheese
- 4 large flour tortillas
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add 1 cup of sliced mushrooms to the skillet and sauté for 3-4 minutes until they start to brown.
- Add 2 cups of fresh spinach to the skillet and cook until wilted, about 2 minutes.
- In a separate bowl, beat 4 large eggs and season with salt and pepper to taste.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side.
- Scramble the eggs until they are fully cooked and mix them with the vegetables in the skillet.
- Warm 4 large flour tortillas in a separate skillet or in the microwave for 20 seconds.
- Divide the egg and vegetable mixture evenly among the tortillas, and sprinkle 1/2 cup of shredded cheddar cheese over the top of each.
- Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
- Serve immediately and enjoy!
