Spinach and Feta Frittata

Ingredients
- 6 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
Instructions
- Preheat the broiler in your oven.
- In a large bowl, whisk together 6 large eggs, 1/4 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Set aside.
- In a 10-inch ovenproof skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 small diced onion and cook until softened, about 3 minutes. Add 2 cloves of minced garlic and cook for an additional 1 minute.
- Add 4 cups of chopped fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Pour the egg mixture over the spinach and onion in the skillet. Cook without stirring for 4-5 minutes, until the edges are set but the center is still slightly runny.
- Sprinkle 1/2 cup of crumbled feta cheese over the top of the frittata.
- Place the skillet under the broiler and broil for 3-4 minutes, until the top is set and golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving. Enjoy!
