Ingredients
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 10 ounces fresh spinach, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 cup crumbled feta cheese
- 2 sheets of store-bought pie crust
- 1 egg, beaten
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 small finely chopped onion and 2 cloves of minced garlic, and cook until softened, about 3 minutes.
- Add 10 ounces of chopped fresh spinach to the skillet and cook until wilted, about 5 minutes. Season with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of nutmeg. Remove from heat and let cool.
- Once the spinach mixture has cooled, stir in 1 cup of crumbled feta cheese.
- Roll out the 2 sheets of store-bought pie crust on a lightly floured surface. Using a round cutter or a small bowl, cut out circles of dough, about 4 inches in diameter.
- Place a spoonful of the spinach and feta mixture in the center of each dough circle. Fold the dough over the filling to create a half-moon shape, then crimp the edges with a fork to seal.
- Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
- Bake in the preheated oven for 20-25 minutes, or until golden brown.
