Spinach and Cheese Fatayer with a Hint of Garlic

Ingredients
- 1 pound of fresh spinach, chopped
- 1 cup of feta cheese, crumbled
- 1 cup of mozzarella cheese, shredded
- 2 tablespoons of olive oil
- 1 small onion, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon of sumac
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of cayenne pepper
- 1/4 teaspoon of nutmeg
- 1 package of pre-made pizza dough or homemade dough
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 small chopped onion and 3 cloves of minced garlic, and sauté until the onion is soft and translucent.
- Add 1 pound of chopped fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool.
- In a large bowl, combine the cooked spinach and onion mixture with 1 cup of crumbled feta cheese, 1 cup of shredded mozzarella cheese, 1 teaspoon of sumac, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1/4 teaspoon of cayenne pepper, and 1/4 teaspoon of nutmeg. Mix well.
- Roll out the pizza dough on a floured surface and cut it into 12 equal-sized circles.
- Place a spoonful of the spinach and cheese mixture in the center of each dough circle. Fold the edges of the dough over the filling to form a triangle, pinching the edges to seal.
- Place the fatayer on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes, or until the dough is golden brown.
