  • 1 bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 cup diced tomatoes
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen mixed vegetables
  • 2 ripe plantains, peeled and sliced
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon butter

Instructions

  • In a medium saucepan, combine 1 cup of rice and 2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 diced onion and cook until softened, about 5 minutes. Add 2 minced garlic cloves, 1 diced bell pepper, and 1 minced jalapeno pepper, and cook for another 3-4 minutes.
  • Stir in 1 cup of diced tomatoes, 1 teaspoon paprika, 1/2 teaspoon cayenne pepper, 1/2 teaspoon dried thyme, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 2-3 minutes.
  • Add 1 cup of frozen mixed vegetables and cooked rice to the skillet. Stir to combine and cook for an additional 5 minutes, allowing the flavors to meld together.
  • Meanwhile, preheat a grill or grill pan over medium-high heat. In a small bowl, mix 1 tablespoon of brown sugar and 1/2 teaspoon of cinnamon. Brush 2 sliced ripe plantains with 1 tablespoon of melted butter and sprinkle with the brown sugar mixture.
  • Grill the plantains for 2-3 minutes per side, until caramelized and tender.
  • Serve the spicy vegetable dirty rice alongside the grilled plantains. Enjoy!
