Ingredients
- 2 cups sushi rice
- 4 sheets nori (seaweed)
- 1/2 lb sashimi-grade tuna, thinly sliced
- 1 avocado, thinly sliced
- 1/4 cup spicy mayo (mayonnaise mixed with sriracha sauce)
- 1/4 cup sesame seeds
- 1/4 cup soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 cup water
Instructions
- Rinse the sushi rice in a fine-mesh strainer until the water runs clear. In a medium saucepan, combine the rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes. Remove from heat and let it stand, covered, for 10 minutes.
- In a small bowl, mix together the rice vinegar, sugar, and salt. Gently fold the vinegar mixture into the cooked rice, being careful not to mash the grains. Let the rice cool to room temperature.
- Lay a bamboo sushi mat on a clean surface. Place a sheet of nori, shiny side down, on the mat. With wet hands, spread a thin layer of sushi rice evenly over the nori, leaving a 1-inch border at the top. Sprinkle sesame seeds over the rice and gently press them into the rice with your hands.
- Flip the nori sheet over so that the rice side is facing down. Arrange the tuna and avocado slices in a line across the center of the nori.
- Using the bamboo mat, roll the sushi away from you, tucking the filling in tightly. Moisten the top border of the nori with water to seal the roll. Repeat with the remaining nori, rice, tuna, and avocado.
- Using a sharp knife, cut each roll into 6 equal pieces. Arrange the pieces on a serving platter, curving them to resemble a caterpillar.
- Drizzle the spicy mayo over the top of the caterpillar rolls. Serve with soy sauce for dipping. Enjoy!
