Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the sliced sausage and cook until browned, about 5 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the sliced peppers, onion, and garlic until softened, about 5 minutes.
  • Stir in the diced tomatoes, dried oregano, red pepper flakes, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.
  • Return the cooked sausage to the skillet and stir to combine with the peppers and tomatoes. Cook for another 5 minutes to heat through.
  • Serve the spicy sausage and peppers hot, either on its own or over cooked pasta or rice. Enjoy!
