- 1 lb pork belly, skin on, cut into 1-inch pieces
- 1 tsp salt
- 1 tsp chili powder
- 1/2 tsp cayenne pepper
- 1/2 tsp paprika
- 1/4 cup vegetable oil
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, toss the pork belly pieces with 1 tsp of salt, 1 tsp of chili powder, 1/2 tsp of cayenne pepper, and 1/2 tsp of paprika until well coated.
