- 1.5 lbs pork belly, cut into 1-inch cubes
- 1 cup pineapple chunks
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 1 cup water
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 tsp whole black peppercorns
- 2 tbsp brown sugar
- 2 tbsp cooking oil
- 2-3 red chili peppers, chopped (adjust to taste)
- Salt to taste
Instructions
- In a large bowl, combine the pork belly, soy sauce, vinegar, garlic, bay leaves, and black peppercorns. Marinate for at least 30 minutes.
- Heat the cooking oil in a large pot over medium heat. Add the marinated pork belly and cook until browned on all sides.
- Add the chopped onion and cook until softened. Pour in the marinade, water, and brown sugar. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 45 minutes to 1 hour, or until the pork is tender and the sauce has thickened.
- Add the pineapple chunks and red chili peppers to the pot. Cook for an additional 5-10 minutes to allow the flavors to meld together.
- Season with salt to taste. Remove the bay leaves before serving.
