  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • 1/2 cup of shredded carrots
  • 3 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, grated
  • 1/2 cup of unsalted peanuts
  • Cooked rice or noodles, for serving

Instructions

  • In the same wok, add the remaining 1 tablespoon of vegetable oil and sauté the garlic and ginger for 1-2 minutes until fragrant.
  • Add the bell peppers, broccoli, snap peas, and carrots to the wok. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Return the tofu to the wok and toss to combine with the vegetables.
  • In a small bowl, whisk together the spicy peanut sauce ingredients (see below). Pour the sauce over the tofu and vegetables, stirring to coat everything evenly.
  • Continue to cook for 2-3 minutes until the sauce thickens slightly and everything is heated through.
