Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons of vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of snap peas
- 1/2 cup of shredded carrots
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 1/2 cup of unsalted peanuts
- Cooked rice or noodles, for serving
Instructions
- In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove from the wok and set aside.
- In the same wok, add the remaining 1 tablespoon of vegetable oil and sauté the garlic and ginger for 1-2 minutes until fragrant.
- Add the bell peppers, broccoli, snap peas, and carrots to the wok. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the tofu to the wok and toss to combine with the vegetables.
- In a small bowl, whisk together the spicy peanut sauce ingredients (see below). Pour the sauce over the tofu and vegetables, stirring to coat everything evenly.
- Continue to cook for 2-3 minutes until the sauce thickens slightly and everything is heated through.
- Sprinkle the stir-fry with unsalted peanuts and serve over cooked rice or noodles.
