Spicy Peanut Tempeh

Ingredients
- 1 package (8 oz) of tempeh, cut into cubes
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of peanut butter
- 1 tablespoon of sriracha sauce
- 1 tablespoon of maple syrup
- 1 clove of garlic, minced
- 1 teaspoon of grated ginger
- 2 tablespoons of vegetable oil
- 1/4 cup of water
- 2 green onions, chopped
- 1 tablespoon of sesame seeds, for garnish
Instructions
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of peanut butter, 1 tablespoon of sriracha sauce, 1 tablespoon of maple syrup, minced garlic, and grated ginger.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add the tempeh cubes and cook for 5-7 minutes, until golden brown.
- Pour the peanut sauce over the tempeh and stir to coat. Add 1/4 cup of water to the skillet and simmer for 5 minutes, until the sauce thickens and coats the tempeh.
- Garnish with chopped green onions and sesame seeds.
- Serve the spicy peanut tempeh over steamed rice or with your favorite vegetables. Enjoy!
