Ingredients
- 1 cup dried lentils
- 4 cups vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 2 teaspoons cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 cups water
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water and drain.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and diced bell pepper. Cook for 5 minutes, or until the vegetables are softened.
- Add the cumin, paprika, cayenne pepper, salt, and black pepper to the pot. Stir to combine and cook for an additional 2 minutes to toast the spices.
- Pour in the vegetable broth, water, and diced tomatoes. Stir in the rinsed lentils.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30-35 minutes, or until the lentils are tender.
- Taste and adjust seasoning if needed. Serve hot, garnished with fresh cilantro.
