Ingredients

  • 1 cup dried lentils
  • 4 cups vegetable broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups water
  • Fresh cilantro for garnish

Instructions

  • Rinse the lentils under cold water and drain.
  • In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and diced bell pepper. Cook for 5 minutes, or until the vegetables are softened.
  • Add the cumin, paprika, cayenne pepper, salt, and black pepper to the pot. Stir to combine and cook for an additional 2 minutes to toast the spices.
  • Pour in the vegetable broth, water, and diced tomatoes. Stir in the rinsed lentils.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30-35 minutes, or until the lentils are tender.
  • Taste and adjust seasoning if needed. Serve hot, garnished with fresh cilantro.
