  • 1 bunch kale, stems removed and leaves chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Rinse the lentils under cold water and drain.
  • In a large pot, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and jalapeno pepper. Cook for 5 minutes, or until the vegetables are softened.
  • Add the cumin, paprika, and cayenne pepper to the pot. Stir to coat the vegetables in the spices.
  • Pour in the vegetable broth and add the lentils. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, or until the lentils are tender.
  • Stir in the chopped kale and cook for an additional 5 minutes, or until the kale is wilted.
  • Season the soup with salt and pepper to taste.
