Ingredients
- 1 cup dried lentils
- 6 cups vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 bunch kale, stems removed and leaves chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water and drain.
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and jalapeno pepper. Cook for 5 minutes, or until the vegetables are softened.
- Add the cumin, paprika, and cayenne pepper to the pot. Stir to coat the vegetables in the spices.
- Pour in the vegetable broth and add the lentils. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, or until the lentils are tender.
- Stir in the chopped kale and cook for an additional 5 minutes, or until the kale is wilted.
- Season the soup with salt and pepper to taste.
