  • 1 pound of large shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • Zest and juice of 1 lemon
  • 1/4 cup of chopped fresh cilantro
  • 2 ripe mangoes, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno pepper, seeded and finely chopped
  • 1/4 cup of chopped fresh mint leaves
  • Juice of 1 lime
  • Salt to taste

Instructions

  • In a large bowl, combine the olive oil, minced garlic, paprika, cayenne pepper, salt, black pepper, and the zest and juice of 1 lemon. Add the peeled and deveined shrimp to the bowl and toss to coat. Let the shrimp marinate for 15 minutes.
  • Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers.
  • Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and set aside.
  • In a separate bowl, combine the diced mangoes, finely chopped red onion, seeded and finely chopped jalapeno pepper, chopped fresh mint leaves, and the juice of 1 lime. Season with salt to taste and mix well to combine.
  • To serve, place the grilled shrimp on a platter and top with the mango salsa. Garnish with chopped fresh cilantro and serve immediately.
