Spicy Jalapeno Corn Dogs with Chipotle Aioli Dipping Sauce

Ingredients
- 6 hot dogs
- 6 wooden skewers
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1 cup buttermilk
- 2 jalapenos, seeded and finely chopped
- Vegetable oil, for frying
- 1/2 cup mayonnaise
- 1 tablespoon chipotle peppers in adobo sauce, minced
- 1 clove garlic, minced
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Insert a wooden skewer into each hot dog, leaving enough exposed for a handle.
- In a large bowl, whisk together 1 cup of flour, 1 cup of cornmeal, 1/4 cup of sugar, 1 tablespoon of baking powder, 1 teaspoon of salt, and 1/2 teaspoon of cayenne pepper.
- Stir in 1 cup of buttermilk and the chopped jalapenos until the batter is smooth.
- Pour vegetable oil into a large pot or deep fryer to a depth of 2 inches. Heat the oil to 375°F (190°C).
- Dip each hot dog into the batter, coating evenly, then carefully place it into the hot oil. Fry 2-3 corn dogs at a time, turning occasionally, until golden brown, about 3-4 minutes. Use tongs to remove and drain on paper towels.
- In a small bowl, mix 1/2 cup of mayonnaise, 1 tablespoon of minced chipotle peppers, 1 clove of minced garlic, and 1 tablespoon of lime juice. Season with salt and pepper to taste.
- Serve the spicy jalapeno corn dogs with the chipotle aioli dipping sauce on the side. Enjoy!
