  • 6 hot dogs
  • 6 wooden skewers
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1 cup buttermilk
  • 2 jalapenos, seeded and finely chopped
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 1 tablespoon chipotle peppers in adobo sauce, minced
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  • Insert a wooden skewer into each hot dog, leaving enough exposed for a handle.
  • In a large bowl, whisk together 1 cup of flour, 1 cup of cornmeal, 1/4 cup of sugar, 1 tablespoon of baking powder, 1 teaspoon of salt, and 1/2 teaspoon of cayenne pepper.
  • Stir in 1 cup of buttermilk and the chopped jalapenos until the batter is smooth.
  • Pour vegetable oil into a large pot or deep fryer to a depth of 2 inches. Heat the oil to 375°F (190°C).
  • Dip each hot dog into the batter, coating evenly, then carefully place it into the hot oil. Fry 2-3 corn dogs at a time, turning occasionally, until golden brown, about 3-4 minutes. Use tongs to remove and drain on paper towels.

Originating in the southern United States, Spicy Jalapeno Corn Dogs are a delicious twist on the classic fairground treat. The addition of fiery jalapenos gives these corn dogs a kick of heat, while the chipotle aioli dipping sauce adds a creamy and smoky flavor. Renowned chef Bobby Flay popularized this dish, infusing it with his signature Southwestern flair. Today, the best version of this dish can be found in food trucks and trendy eateries across the country. To make this dish at home, it's crucial to get the batter just right, ensuring it's crispy and flavorful. Alternatively, some chefs recommend using a spicy sausage for an extra punch of heat.
