Ingredients
- 4 large russet potatoes, diced into 1/2 inch cubes
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 jalapenos, seeded and diced
- 1 cup shredded cheddar cheese
- 2 green onions, thinly sliced
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the diced potatoes with 1/4 cup of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1/2 teaspoon of paprika, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of onion powder until the potatoes are evenly coated.
- Spread the seasoned potatoes in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, or until golden brown and crispy, stirring halfway through.
- Once the potatoes are cooked, transfer them to a large bowl and add the diced jalapenos and shredded cheddar cheese. Toss to combine until the cheese is melted and the jalapenos are evenly distributed.
- Garnish with thinly sliced green onions and serve hot as a delicious and spicy breakfast side dish.
