  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons of cornstarch
  • 2 tablespoons of vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 3 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • 1/4 cup of soy sauce
  • 2 tablespoons of sriracha sauce
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of brown sugar
  • 1 teaspoon of sesame oil
  • 2 green onions, chopped
  • Cooked rice, for serving

Instructions

  • In a large bowl, toss the cubed tofu with 2 tablespoons of cornstarch until evenly coated.
  • Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the tofu and cook until crispy and golden brown, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the sliced red and yellow bell peppers, and broccoli. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Add the minced garlic and grated ginger to the skillet, and cook for an additional 1-2 minutes until fragrant.
  • In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of sriracha sauce, 2 tablespoons of rice vinegar, 1 tablespoon of brown sugar, and 1 teaspoon of sesame oil. Pour the sauce over the vegetables in the skillet.
  • Return the crispy tofu to the skillet and toss to coat everything in the sauce. Cook for 2-3 minutes until heated through.
  • Sprinkle with chopped green onions and serve the spicy garlic tofu stir-fry over cooked rice. Enjoy!
