Ingredients
- 1 cup cooked quinoa
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup chopped fresh cilantro
- 1 avocado, diced
- 1/4 cup chipotle mayonnaise
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
Instructions
- In a large bowl, combine 1 cup cooked quinoa, 1 can of black beans, 1 cup corn kernels, diced red bell pepper, diced red onion, chopped fresh cilantro, and diced avocado.
- Add 1/4 cup of chipotle mayonnaise to the mixture and stir until well combined.
- Lay out the flour tortillas and divide the quinoa and vegetable mixture evenly among them, spreading it out in the center of each tortilla.
- Sprinkle 1/4 cup of shredded cheddar cheese over the quinoa mixture on each tortilla.
