  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 4 large sweet potatoes
  • 2 tablespoons cornstarch
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat the oven to 425°F (220°C).
  • In a blender or food processor, combine the chipotle peppers in adobo sauce, olive oil, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Blend until smooth.
