Spicy Chipotle Southwest Chicken Wrap with Sweet Potato Fries
Created by: Howcan Team
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup chipotle peppers in adobo sauce
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 4 large sweet potatoes
- 2 tablespoons cornstarch
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 425°F (220°C).
- In a blender or food processor, combine the chipotle peppers in adobo sauce, olive oil, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Blend until smooth.
- Place the chicken breasts in a resealable plastic bag and pour the chipotle marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 30 minutes.
- While the chicken is marinating, peel and cut the sweet potatoes into fries. In a large bowl, toss the sweet potato fries with cornstarch, olive oil, paprika, garlic powder, salt, and black pepper until evenly coated. Spread the fries in a single layer on a baking sheet lined with parchment paper.
- Bake the sweet potato fries in the preheated oven for 25-30 minutes, flipping once halfway through, until they are crispy and golden brown.
- Heat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side, or until cooked through and no longer pink in the middle. Remove from the grill and let it rest for a few minutes before slicing into strips.
- To assemble the wraps, place a flour tortilla on a clean surface. Layer with shredded lettuce, diced tomatoes, grilled chicken strips, shredded cheddar cheese, and a dollop of sour cream. Fold in the sides of the tortilla and roll it up tightly.
- Serve the spicy chipotle southwest chicken wraps with a side of crispy sweet potato fries. Enjoy!
