Ingredients
- 1 lb of shrimp, peeled and deveined
- 2 tbsp of chipotle peppers in adobo sauce, minced
- 1 tsp of cumin
- 1 tsp of chili powder
- 1/2 tsp of garlic powder
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 2 tbsp of olive oil
- 8 small corn tortillas
- 1 cup of shredded lettuce
- 1/2 cup of diced tomatoes
- 1/4 cup of chopped cilantro
- 1/2 cup of crumbled queso fresco
- 1 lime, cut into wedges
Instructions
- In a medium bowl, combine the shrimp, minced chipotle peppers, cumin, chili powder, garlic powder, salt, and black pepper. Toss to coat the shrimp evenly.
- In a large skillet, heat the olive oil over medium-high heat. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat.
- In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side.
- To assemble the tacos, divide the cooked shrimp evenly among the tortillas. Top with shredded lettuce, diced tomatoes, chopped cilantro, and crumbled queso fresco.
- Serve the tacos with lime wedges on the side for squeezing over the top.
