  • 1 can of young green jackfruit, drained and rinsed
  • 1 tablespoon of olive oil
  • 1/2 onion, diced
  • 2 cloves of garlic, minced
  • 1/2 cup of barbecue sauce
  • 1/4 cup of vegetable broth
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of chili powder
  • Salt and pepper to taste
  • 4 hamburger buns
  • 1/4 cup of coleslaw (optional, for serving)

Instructions

  • Using your hands or a fork, shred the jackfruit into small pieces, discarding any tough core pieces.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened, about 3-4 minutes.
  • Add the shredded jackfruit to the skillet and cook for 5 minutes, stirring occasionally.
  • Stir in the barbecue sauce, vegetable broth, smoked paprika, cumin, and chili powder. Season with salt and pepper to taste.
  • Reduce the heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until the jackfruit is tender and the flavors are well combined.
  • While the jackfruit is simmering, lightly toast the hamburger buns in a toaster or oven.
  • Once the jackfruit is ready, spoon a generous amount onto the bottom half of each bun. Top with coleslaw if desired, and cover with the top half of the bun.
  • Serve the vegan pulled pork sandwiches immediately, and enjoy!
