Ingredients
- 1 pound of smoked sausage, sliced
- 2 bell peppers, sliced
- 1 onion, sliced
- 2 chipotle peppers in adobo sauce, minced
- 1/4 cup of ketchup
- 2 tablespoons of honey
- 1 tablespoon of apple cider vinegar
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a small bowl, mix together the minced chipotle peppers, ketchup, honey, apple cider vinegar, smoked paprika, and garlic powder to make the glaze. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced bell peppers and onion. Cook until the vegetables are tender, about 5-7 minutes.
- Return the cooked sausage to the skillet with the peppers and onions. Pour the chipotle glaze over the sausage and peppers. Stir to coat everything evenly. Cook for an additional 2-3 minutes, until the glaze is heated through and the sausage and peppers are coated.
- Season with salt and pepper to taste.
