Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine 1.5 lbs ground chicken, 1 cup breadcrumbs, 1/2 cup finely chopped onion, 2 cloves minced garlic, 1/4 cup chopped cilantro, 1 egg, 1 tsp cumin, 1 tsp chili powder, 1/2 tsp salt, and 1/4 tsp black pepper. Mix until well combined.
  • Transfer the chicken mixture to a greased loaf pan, shaping it into a loaf shape.
  • In a small bowl, mix 1/2 cup ketchup, 2 tbsp adobo sauce, 1 tbsp honey, and 1 tbsp apple cider vinegar to make the chipotle glaze.
  • Spread the chipotle glaze over the top of the meatloaf, reserving some for serving.
  • Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving. Drizzle with the remaining chipotle glaze before serving.
