Spicy Chili Tofu Stir-fry

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of cornstarch
- 1 tablespoon of vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 2 green onions, chopped
- 1 tablespoon of chili garlic sauce
- 1 tablespoon of rice vinegar
- 1 teaspoon of sugar
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- In a bowl, mix the cubed tofu with 1 tablespoon of soy sauce, sesame oil, and cornstarch until well coated.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the tofu to the skillet and cook until golden brown on all sides, then remove from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, onion, garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, mix together the remaining 1 tablespoon of soy sauce, chili garlic sauce, rice vinegar, and sugar. Pour the sauce over the vegetables in the skillet and stir to combine.
- Add the cooked tofu back into the skillet and toss to coat everything in the sauce. Cook for an additional 2-3 minutes to heat through.
- Season with salt and pepper to taste, then sprinkle with chopped green onions.
- Serve the spicy chili tofu stir-fry over cooked rice or noodles. Enjoy!
