Ingredients
- 8 cups of chicken broth
- 2 boneless, skinless chicken breasts, thinly sliced
- 1 onion, thinly sliced
- 4 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 2 tablespoons of fish sauce
- 2 tablespoons of soy sauce
- 2 tablespoons of sriracha sauce
- 1 tablespoon of sugar
- 8 ounces of rice noodles
- 1 cup of bean sprouts
- 1/2 cup of fresh cilantro, chopped
- 1/4 cup of fresh mint leaves
- 1 lime, cut into wedges
- Sriracha sauce and hoisin sauce for serving
Instructions
- In a large pot, bring the chicken broth to a boil.
- Add the sliced chicken, onion, garlic, ginger, fish sauce, soy sauce, sriracha sauce, and sugar to the pot.
- Reduce the heat and let the soup simmer for 30 minutes, until the chicken is cooked through and the flavors have melded.
- While the soup is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
- Divide the cooked rice noodles among 4 serving bowls.
- Ladle the hot soup over the noodles, making sure to distribute the chicken and onions evenly.
- Top each bowl with bean sprouts, cilantro, and mint leaves.
- Serve with lime wedges, sriracha sauce, and hoisin sauce on the side for added flavor.
