  • 1 onion, diced
  • 3 cloves garlic, minced

  • 1/4 cup tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for serving

Instructions

  • Cook the whole wheat penne pasta according to the package instructions. Drain and set aside.

  • In the same skillet, heat the remaining 1 tbsp of olive oil. Add the diced onion and cook until softened. Add the minced garlic and cook for another minute.
  • Stir in the diced tomatoes, chicken broth, tomato paste, dried oregano, dried basil, and red pepper flakes. Season with salt and pepper to taste. Bring the sauce to a simmer.
  • Add the cooked chicken back into the skillet and let it simmer for 5 minutes to allow the flavors to meld together.
  • Add the cooked whole wheat penne pasta to the skillet and toss to coat it with the spicy chicken sauce.
