  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 tsp red pepper flakes
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

  • 1/2 cup grated Parmesan cheese

Instructions

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until no longer pink. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the diced onion and cook until softened. Add the minced garlic and cook for another minute.
  • Stir in the diced tomatoes, chicken broth, heavy cream, red pepper flakes, oregano, and basil. Season with salt and pepper. Let the sauce simmer for 5 minutes.
  • Add the cooked chicken back into the skillet and stir to combine with the sauce.
  • Add the cooked penne pasta to the skillet and toss to coat with the sauce.
  • Stir in 1 cup of shredded mozzarella cheese and 1/4 cup of grated Parmesan cheese until melted and well combined.
  • Transfer the cheesy spicy chicken penne to a serving dish and sprinkle the remaining 1/2 cup of shredded mozzarella cheese and 1/4 cup of grated Parmesan cheese on top.
  • Broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly.
