Space Station Stir Fry

Ingredients
- 1 tablespoon of vegetable oil
- 1/2 cup of sliced carrots
- 1/2 cup of sliced bell peppers
- 1/2 cup of sliced mushrooms
- 1/2 cup of broccoli florets
- 1/2 cup of snap peas
- 1/2 cup of sliced tofu
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 1 teaspoon of cornstarch
- 1/4 cup of water
- 1/4 teaspoon of black pepper
- 2 cups of cooked rice
Instructions
- In a small bowl, mix together 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of cornstarch, and 1/4 cup of water. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add 1/2 cup of sliced carrots, 1/2 cup of sliced bell peppers, 1/2 cup of sliced mushrooms, 1/2 cup of broccoli florets, and 1/2 cup of snap peas to the skillet. Stir fry for 3-4 minutes until the vegetables are tender-crisp.
- Push the vegetables to the side of the skillet and add 1/2 cup of sliced tofu to the center. Cook for 2-3 minutes until lightly browned.
- Pour the sauce mixture over the vegetables and tofu. Stir well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens.
- Season with 1/4 teaspoon of black pepper and stir to combine.
- Serve the stir fry over 2 cups of cooked rice and enjoy!
