  • 2 tbsp vegetable oil
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • Salt and pepper to taste

Instructions

  • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add the chicken pieces and stir-fry for 5-6 minutes until cooked through. Season with salt and pepper. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and grated ginger, and stir-fry for 1 minute until fragrant.
  • Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes until they are tender-crisp.
  • Return the cooked chicken to the skillet and pour in the soyaki sauce. Stir well to coat everything in the sauce and cook for an additional 2-3 minutes.
  • Add the cashew nuts to the skillet and toss to combine with the chicken and vegetables.
  • Serve the soyaki chicken stir-fry over cooked rice or noodles. Enjoy!
