Ingredients
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots)
- 1/2 cup cashew nuts
- 1/2 cup soyaki sauce
- 2 tbsp vegetable oil
- 1 tsp minced garlic
- 1 tsp grated ginger
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the chicken pieces and stir-fry for 5-6 minutes until cooked through. Season with salt and pepper. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and grated ginger, and stir-fry for 1 minute until fragrant.
- Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes until they are tender-crisp.
- Return the cooked chicken to the skillet and pour in the soyaki sauce. Stir well to coat everything in the sauce and cook for an additional 2-3 minutes.
- Add the cashew nuts to the skillet and toss to combine with the chicken and vegetables.
- Serve the soyaki chicken stir-fry over cooked rice or noodles. Enjoy!
