Southwest Quinoa Salad

Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed. Fluff with a fork and let it cool.
- In a large bowl, combine the cooked quinoa, black beans, corn, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to coat evenly.
- Gently fold in the diced avocado.
- Serve immediately or refrigerate for at least 30 minutes to allow the flavors to meld. Enjoy!
