  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  • In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed. Fluff with a fork and let it cool.
  • In a large bowl, combine the cooked quinoa, black beans, corn, red bell pepper, red onion, and cilantro.
  • In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper.
  • Pour the dressing over the quinoa mixture and toss to coat evenly.
  • Gently fold in the diced avocado.
  • Serve immediately or refrigerate for at least 30 minutes to allow the flavors to meld. Enjoy!
