  • 1/2 cup of shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup of sour cream
  • 1/4 cup of salsa
  • 1 tablespoon of olive oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the diced red bell pepper and red onion to the skillet and sauté for 2-3 minutes until softened.
  • Add the cooked and shredded chicken breast, black beans, corn kernels, ground cumin, chili powder, salt, and pepper to the skillet. Cook for an additional 3-4 minutes, stirring occasionally, until the chicken is heated through and the spices are well combined.
  • Warm the flour tortillas in a separate skillet or in the microwave for 10-15 seconds to make them more pliable.
  • Divide the chicken and vegetable mixture evenly among the 4 tortillas, spreading it out in the center of each tortilla.
  • Top each tortilla with sliced avocado, shredded cheddar cheese, and chopped cilantro.
  • Drizzle each wrap with 1 tablespoon of sour cream and 1 tablespoon of salsa.
  • Fold in the sides of the tortillas and then roll them up tightly to form a wrap.
