Ingredients
- 1 lb of cooked and shredded chicken breast
- 1 cup of cooked black beans
- 1 cup of corn kernels
- 1/2 cup of diced red bell pepper
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of diced red onion
- 1 avocado, sliced
- 1/2 cup of shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup of sour cream
- 1/4 cup of salsa
- 1 tablespoon of olive oil
- 1 teaspoon of ground cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced red bell pepper and red onion to the skillet and sauté for 2-3 minutes until softened.
- Add the cooked and shredded chicken breast, black beans, corn kernels, ground cumin, chili powder, salt, and pepper to the skillet. Cook for an additional 3-4 minutes, stirring occasionally, until the chicken is heated through and the spices are well combined.
- Warm the flour tortillas in a separate skillet or in the microwave for 10-15 seconds to make them more pliable.
- Divide the chicken and vegetable mixture evenly among the 4 tortillas, spreading it out in the center of each tortilla.
- Top each tortilla with sliced avocado, shredded cheddar cheese, and chopped cilantro.
