  • 1 lb boneless, skinless chicken breasts, sliced into strips
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 chipotle peppers in adobo sauce
  • 1 tbsp adobo sauce
  • 1 clove garlic, minced
  • Juice of 1 lime

Instructions

  • In a small bowl, mix together the cumin, chili powder, garlic powder, onion powder, paprika, salt, and pepper. Rub the spice mixture over the chicken strips.
  • Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips and cook for 5-6 minutes, or until cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the black beans, corn, and diced tomatoes. Cook for 2-3 minutes, or until heated through.
  • In a blender or food processor, combine the chipotle peppers, adobo sauce, garlic, lime juice, sour cream, and mayonnaise. Blend until smooth to make the spicy chipotle sauce.
  • To assemble the wraps, lay out the flour tortillas and divide the cooked rice, black bean and corn mixture, cooked chicken, shredded lettuce, diced red onion, chopped cilantro, and shredded cheddar cheese evenly among the tortillas.
  • Drizzle the spicy chipotle sauce over the fillings.
  • Fold in the sides of the tortillas and then roll them up tightly to form the wraps.
  • Serve immediately, or wrap in foil and refrigerate for later. Enjoy!
